CRUSH IT! Café: Salted Caramel Cupcakes


  • 1 scoop (28.4g) Core Nutritionals ISO Salted Caramel
  • 1/6 cup (20g) oat flour
  • ½ tsp. baking powder
  • ¼ tsp. baking soda
  • ¼ tsp. salt
  • ½ cup (130g) cannellini beans, pureed
  • 1 T. vanilla almond milk
  • 1 whole egg
  • ½ T. (7g) coconut oil, melted
  • 1 T. (19g) sugar-free caramel sauce
  • 1 tsp. vanilla extract
  • ¼ cup (48g) brown sugar
  • Optional toppings: caramel squares, pretzels, sea salt


  1. Preheat oven to 325 degrees. 
  2. In a food processor, puree beans and 1 T. milk until smooth. 
  3. Melt coconut oil and caramel sauce in a microwave safe bowl. 
  4. Mix in brown sugar and vanilla. 
  5. Add pureed beans and egg, stir to combine. 
  6. Mix in dry ingredients – baking powder, baking soda, salt, oat flour and protein powder and stir until just combined. 
  7. Use cupcake liners in muffin tin and divide batter evenly between 8 cups. 
  8. Bake for 12-13 minutes until just set. Let cool on a cooling rack while you prepare the frosting. 
  9. Mix all ingredients below until smooth and evenly divide over all cupcakes.

Dry Ingredients:

  • 2 scoops S’mores CORE GROW
  • 1 scoop Chocolate Decadence CORE ISO
  • 150g rolled oats
  • 28g chocolate chips
  • 60g raisins

Wet Ingredients:

  • 1/2 cup sugar free or low calorie syrup


  1. Preheat the oven to 350° Fahrenheit.
  2.  Spread rolled oats across a pan and toast in the oven for 16-18 minutes. 
  3. Combine all other dry ingredients into a large bowl and mix well. 
  4. Next, add in the toasted oats. Lastly, pour in the syrup and mix thoroughly. Spoon batter into a 9”x9” pan and press firmly. 
  5. Cover and place in freezer for 10-15 minutes to allow batter to become solid. 
  6. Take out of freezer and slice into 8 small bars before enjoying!
